This is from my "Vegan With A Vengeance" cookbook by Isa Chandra Moskowitz.
These are undoubtedly the BEST I've EVER tasted!! I almost could have made myself sick because I ate more of these than I care to say because they turned out SO good!
1 Cup non-hydrogenated margarine(I used Earth Balance non-dairy spread)
1 and1/4 cups sugar
1 tablespoon molasses(I couldn't find any molasses so I sub'd maple syrup)
2 tsps vanilla extract
2 and 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp salt(I used sea salt)
1 and 1/2 cups semi-sweet chocolate chips
Preheat oven to 350.
Cream together margarine and sugar until fluffy. Add molasses and vanilla. Add flour, baking soda, and salt and mix well. Fold in chocolate chips. Drop by teaspoonfuls on a baking sheet(it says ungreased but I put a thin coat of vegetable oil on the sheet anyway because I was worried about them sticking) a little over 2 inches apart. Bake for 8-10 minutes, until ever so slightly browned. Let cool for 5 minutes.
