Does anybody need a simple vegan gravy recipe that can be used while planning holiday meals? This is also pretty yummy on everyday rice, spuds, biscuits, etc… too.
1. Using a few tablespoons of veggie oil, cook some onion and garlic until they are at the yummy see-through translucent stage; slightly crunchy and slightly limp.
2. Add just as much flour as there is oil in the pan, a pinch of yeast, and a splash of flavoring sauce like soy, or a specialty taste blend. Stir this into a paste over really low heat so that it does not burn.
3. Add about 2 cups of water, veggie juice, or another favorite clear liquid ingredient and bring everything back to a boil stirring often until it starts to thicken.
4. Add finely cut veggies like pretty red, yellow, and green peppers, yucky mushrooms if you must, and a ¼ cup or so of red wine or red wine vinegar and stir. Turn off heat, and continue to stir until things cool down a little.
5. Taste the gravy. Add any powdered spices, ground pepper, or salt type of things that you think that it needs.
6. If the gravy is too thick, add more of the clear liquid to thin it down stirring until all lumps are gone.

Yep, I sure do cook ‘old-style’ without actually following recipes or ingredient amounts. Take this basic recipe and start with a plain batch without a lot of extra’s in it. After making it once, tasting as you go, you will understand what needs to go into it to make your family happy. We all have different tastes.
Yep, at step 3, this can all go into a microwave safe bowl to zap. Stir often. Do not let it over thicken. Little zaps at a time until done.
Non-Vegan Notes:
Yes! This gravy is just screaming for a little blue cheese, or a tad of grated cheese sprinkled over the top for vegetarians, and some meat crumbs mixed in for non-vegetarians. It is totally possible to divide up the finished product and add goodies that make every kind of friend sitting at the same table happy. For mixed-diet families this recipe is a big plus.
